Ingredients
Allergen analysis incomplete — one or more ingredients could not be classified
- 3 pc very ripe bananas
- 250 g plain flour
- 100 g butter — melted
- 120 g sugar
- 2 pc eggs
- 1 tsp baking soda
Method
- Heat the oven to 175 °C / 350 °F and line a loaf tin.
- Mash the bananas in a large bowl until almost smooth.
- Stir in the melted butter, sugar and eggs.
- Fold in the flour and baking soda until only just combined — a few streaks of flour are fine, and overmixing makes the loaf tough.
- Pour into the tin and bake for 50–60 minutes, until a skewer pushed into the centre comes out clean.
- Cool in the tin for 10 minutes, then turn out onto a rack.
Before you cook
- The batter contains raw flour and raw egg. Do not taste or eat it raw; bake the loaf through as described.
