Ingredients

Allergen analysis incomplete — one or more ingredients could not be classified

  • 3 pc very ripe bananas
  • 250 g plain flour
  • 100 g butter — melted
  • 120 g sugar
  • 2 pc eggs
  • 1 tsp baking soda

Method

  1. Heat the oven to 175 °C / 350 °F and line a loaf tin.
  2. Mash the bananas in a large bowl until almost smooth. A few small lumps are fine.
  3. Stir in the melted butter, sugar and eggs until evenly combined.
  4. Fold in the flour and baking soda until only just combined — a few streaks of flour are fine, and overmixing makes the loaf tough.
  5. Pour into the tin and bake for 50–60 minutes. Start checking at 50 minutes: a skewer pushed into the centre should come out clean.
  6. Cool in the tin for 10 minutes, then turn out onto a rack.

Before you cook

  • The batter contains raw flour and raw egg. Do not taste or eat it raw; bake the loaf through as described.
